Strawberry Pie

Ingredients: 

  • 1 pre-baked pie crust 
  • 4 cups fresh strawberries, sliced 
  • 1 cup sugar 
  • 2 tbsp cornstarch 
  • 1/2 cup water 
  • Whipped cream (optional) 

Instructions: 

  1. Combine 2 cups of sliced strawberries, sugar, cornstarch, and water in a saucepan. Cook over medium heat, stirring until thickened. Let it cool. 
  1. Place the remaining strawberries in the pre-baked pie crust. 
  1. Pour the cooled strawberry sauce over the strawberries. 
  1. Refrigerate for 2 hours to set. 
  1. Serve chilled, with optional whipped cream. 

Strawberry Smoothie

Ingredients: 

  • 1 cup fresh strawberries 
  • 1 ripe banana 
  • 1/2 cup plain yogurt 
  • 1/2 cup milk 
  • 2 tbsp honey 
  • Ice cubes (optional) 

Instructions: 

  1. Blend strawberries, banana, yogurt, milk, and honey in a blender. 
  1. Add ice cubes for extra thickness. 
  1. Blend until smooth. 
  1. Serve immediately and enjoy. 

Strawberry Salad

Ingredients: 

  • 4 cups fresh spinach 
  • 1 1/2 cups fresh strawberries, sliced 
  • 1/2 cup feta cheese, crumbled 
  • 1/4 cup sliced almonds 
  • Balsamic vinaigrette dressing 

Instructions: 

  1. Toss spinach and sliced strawberries in a large bowl. 
  2. Sprinkle sliced almonds over the top. 
  3. Drizzle with your preferred balsamic vinaigrette dressing. 
  4. Toss the salad gently and serve. 

Strawberry Muffins

Ingredients: 

  • 1 1/2 cups all-purpose flour 
  • 1/2 cup sugar 
  • 2 tsp baking powder 
  • 1/2 tsp salt 
  • 1/4 cup unsalted butter, melted 
  • 1/2 cup milk 
  • 1 egg 
  • 1 cup fresh strawberries, diced 

Instructions: 

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners. 
  1. In a bowl, mix the dry ingredients 
  1. In a different bowl, whisk the melt butter, egg, and milk. 
  1. Combine wet and dry ingredients, then gently fold in the diced strawberries. 
  1. Fill each muffin cup 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean. 
  1. Cool for a few minutes before serving.
